Glycation is a non-enzymatic chemical reaction between a reducing sugar and a free amino group of a protein, lipid or nucleic acid. Glycation is a natural process that occurs in the body as a result of elevated blood sugar levels. When glucose molecules bind to proteins, this creates advanced glycation end products (AGEs), which can damage and impair the function of these proteins. This process can contribute to a number of health problems, including diabetes, heart disease, smoking, and skin aging.
